  1. Cut the boneless chicken thigh (bones removed) into medium pieces.
  2. Mix the chicken with the marinade: soy sauce, white pepper, garlic, ginger, sugar, and salt, stir well, then marinate for at least 30 minutes (overnight for better flavor if selling).
  3. Mix the tapioca starch, all-purpose flour, baking powder, and salt for the dry coating, and stir well.
  4. Also make a coarser, crumbly dry coating using a food processor.
  5. For the sauce, pour water into a bowl, then add fish sauce, soy sauce, white vinegar, honey, and sugar.
  6. Add about 5 g of katsuobushi (bonito flakes).
  7. Cook the sauce until gently simmering, about 3 minutes.
  8. Thicken the sauce with the tapioca slurry, adding it little by little to your desired consistency.
  9. Prepare a wet batter (water mixed with tapioca starch), dip the chicken in the wet batter, then coat it in the dry coating.
  10. Deep-fry using the double-fry method: fry first until half-cooked (still pale), then fry again until crispy.
  11. Toss the fried chicken with the sauce.
  12. Serve over rice with a sunny-side-up egg, topped with sesame seeds and scallion.
