  1. Clean the shrimp and peel off the shells (keep the shells and heads for stock, the meat for topping).
  2. Toast the shrimp shells and heads with a little oil, then add water and simmer for about 5 minutes to soften them.
  3. Blend the shells and heads with a little water until smooth, then strain to get a smooth shrimp stock.
  4. Toast, then blend into a paste: red curly chilies, bird's-eye chilies, shallots, garlic, candlenuts, ginger, and dried shrimp (ebi).
  5. Sauté the spice paste with a little oil along with Indonesian bay leaves, kaffir lime leaves, and lemongrass over low heat.
  6. Make a mixture of oil and flour (a roux), then pour in the blended shrimp stock and stir until fully combined with no lumps.
  7. Add water gradually while stirring until smooth, then add 200 ml coconut milk and cook over low heat.
  8. Season with salt and a little pepper, and taste.
  9. Add 2 tsp rice flour dissolved in a little water to thicken the broth.
  10. Add the peeled shrimp as topping, cooking briefly so it doesn't overcook.
  11. Boil the yellow noodles, bean sprouts, and eggs (boil the eggs for 6 minutes).
  12. Arrange the noodles, bean sprouts, eggs, and shrimp in a bowl, then ladle the broth over.
