Steps

  1. For the three onion pasta, bring water to the boil, add salt, then cook the spaghetti until it is only about 70 percent done.
  2. Heat a generous amount of olive oil in a pan, then add the smoked beef torn into rough pieces.
  3. Add the chopped spring onion, garlic and shallot, then fry until golden and fragrant.
  4. Add the pasta together with a little of its cooking water, then cook until all of the seasoning is absorbed into the pasta.
  5. Taste it before serving because the pasta water is already salty, then scatter over chopped parsley.
  6. For the creamy garlic shrimps, boil the prawn shells and heads in 200 ml of water for 10 minutes to make a stock.
  7. Season the peeled prawns with salt and pepper, then cook them briefly in butter until half done and lift them out.
  8. Pour in a little olive oil, fry the chopped onion and ground garlic, add the white wine, then cook until the liquid evaporates.
  9. Add the prawn stock, parmesan cheese and cooking cream, then add plenty of black pepper.
  10. Return the prawns to the pan along with the cooked pasta, then toss until the cream coats every strand.
  11. For the bang bang sausage pasta, cook the spaghetti until al dente and set it aside.
  12. Heat olive oil, add the sausage meat squeezed out of its casing along with the minced meat, season with salt, then cook until everything is browned.
  13. Add the chopped garlic and onion, then cook until they soften.
  14. Add water, bottled tomato ketchup and the blended mala paste, then simmer over low heat for about 10 minutes until the flavours come together.
  15. Add the pasta, cook until it soaks up the sauce, add chopped coriander leaves, then serve with the remaining meat spooned on top.
