Milk-Broth Kolak

Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Boil the cut-up cassava in water first (it has the toughest texture of the three).
  2. While waiting, cut the sweet potato to about the same size as the cassava, and cut the plantain to a similar size too.
  3. Check the cassava's doneness by poking it with a fork; once it's fairly tender, add the sweet potato, cover again, and cook for about 10 more minutes until the sweet potato is tender, then turn off the heat and remove.
  4. Shave/chop the palm sugar into small pieces so it dissolves more easily.
  5. Pour about 1 liter of full cream milk into a pot, add the shaved palm sugar, add plenty of pandan leaves, and bring to a boil until the sugar dissolves.
  6. Add a little salt, and taste for sweetness before adding the cassava, sweet potato, and plantain.
  7. Add the cassava, sweet potato, and plantain (the plantain doesn't need pre-boiling since its texture is already soft), cook over low heat while stirring constantly so the milk doesn't split, until it simmers gently without boiling over.
  8. Once everything is tender and cooked through, serve.
