  2. Cook over medium heat, stirring constantly, until everything blends up to a boil, then turn off the heat.
  3. Pour it into a tin, then leave it to set at room temperature or in the refrigerator.
  4. Put 1 sachet of clear agar-agar (7 grams), 5 tablespoons of granulated sugar, and 500 ml of clean water into a pan.
  5. Cook over medium heat while stirring it up to a boil, then turn off the heat.
  6. Pour it into a container, then leave it to set.
  7. Put 1 can of sweetened condensed milk (370 grams), 8 tablespoons of granulated sugar, 1 litre of clean water, 2 drops of food colouring, and 1 sachet of Kara coconut milk into a pan.
  8. Cook over medium heat while stirring everything up to a boil, then turn off the heat before pouring it into a jug.
  9. Bring 750 ml of water to a boil, tip in 120 grams of tapioca pearls, cover it, then cook for 5 minutes over medium heat without stirring.
  10. Turn off the heat, then rest it for 20 minutes with the lid on.
  11. Top up with 300 ml of water, cover it, turn the heat back on, then cook for 7 minutes.
  12. Turn off the heat, rest it for another 20 minutes so the pearls cook through perfectly, then drain them into a bowl.
  13. Peel 500 grams of sweet potato, cut it into chunks, then steam it until tender.
  14. Mash the sweet potato, add 1 glass of water, then blend it completely smooth.
  15. Take the mango jelly with the clear agar-agar out of the refrigerator, then cut them into pieces.
  16. Tip the mango jelly, clear agar-agar, tapioca pearls, and the milk base into a large bowl, mixing everything together.
  17. Spoon the sweet potato into glasses, pour in the drink, then finish with grated cheese on top.
