  1. Wilt the banana leaves over the stove flame, and get the bamboo pins ready too.
  2. Wash the rice, put it in a pot, add 1 tsp salt and 750 ml water, then stir to combine.
  3. Turn on the heat and cook until the water reduces, stirring now and then so the rice does not scorch.
  4. Once the water has reduced and the rice has become aron (par-cooked), turn off the heat and leave it covered for 15 minutes so the moisture soaks into the grains.
  5. Pound the par-cooked rice until the grains break down a little, but it does not need to be completely smooth. A pestle is quicker if you have one.
  6. Take a portion of the rice and shape it into an oval log. Size it to the banana leaves you have. Repeat until it is all used.
  7. Wrap in two banana leaves, one large and one small, so it does not leak. Roll it up, pin both ends, then trim off the excess leaf so it looks neat.
  8. Boil the lontong in plenty of water so they are fully submerged, cover the pot, and boil for about 2 hours. Check now and then and top up the water if it gets low.
  9. Lift the lontong out and drain them standing upright so the water runs off. Once cool, slice them. If they feel sticky, wrap the knife blade in plastic first.
