Banana Leaf Lontong (Compressed Rice Cakes)

Open offline saves

Ingredients

Steps

  1. Prepare 1 kg of rice, preferably a sticky-textured variety, then wash it clean.
  2. Drain the rice until it is completely dry so it is easier to put into the leaves, then set it aside.
  3. Cut banana leaves to about two hand spans, around 10 to 12 sheets.
  4. Wipe the banana leaves with a dry, clean cloth.
  5. It is best to air the banana leaves for a day before use so they are pliable and not stiff; do not wilt them over the stove if you want the lontong to stay green.
  6. Roll each banana leaf into a tube two to three fingers wide with the green side facing inward so the lontong comes out green.
  7. Fold over the soft end of the leaf, then pin it with a bamboo skewer.
  8. Fold the leaf slightly, fold in both the left and right sides, then pin it with a bamboo skewer.
  9. Once all the leaf tubes are made, fill them with the rice you set aside earlier.
  10. Fill each one to just under half of the tube so the lontong cooks up firm and not mushy.
  11. Level the rice, then pin the top end with a bamboo skewer; the stiffer top part of the leaf can simply be folded over.
  12. Repeat until all the rice has been packed into the leaves.
  13. Stand the lontong upright in a tall, straight-sided steamer pot so they come out nicely shaped and round.
  14. Put the pot on the stove and fill it with water until it is full.
  15. Cover the pot and cook for about four hours over high heat until the lontong are done.
  16. After about one hour, open the pot and top up the water until full again, then keep cooking until the lontong are done.
  17. After four hours, when the lontong are cooked, turn off the heat and lift them out of the pot.
  18. Set a steamer rack over a container and drain the lontong standing upright so the water really runs off and they dry.
  19. Let the lontong cool and drain completely before serving so they become firmer.
