  1. Grind the fine spice paste (ground pepper, coriander, shrimp paste, turmeric, candlenuts, red curly chilies) with a little water until completely smooth.
  2. Cut up the coarse spice ingredients (shallots, garlic, ginger, lemongrass, galangal, aromatic ginger, red curly chilies, red bird's-eye chilies), then chop/grind coarsely (not too fine).
  3. Sauté the fine spice paste together with the kaffir lime leaves (torn) until fragrant.
  4. Add the coarse spice mixture, sauté until cooked.
  5. Add the chicken, stir, then pour in about 400 ml water, stir well, and bring to a boil.
  6. Cover the pan, lower the heat, and cook until the water has reduced by half.
  7. Add the salt, chicken bouillon powder, and sugar, stir well, cover again, and cook until the chicken is fully cooked (some liquid can remain, to taste).
