Melt-in-the-Mouth Glossy Nastar (Pineapple Tarts)

  1. Put the butter into a bowl and add the powdered sugar, sifted first so it has no lumps.
  2. Beat on the lowest mixer speed for just 1 minute; do not overbeat or the cookies will spread in the oven.
  3. Add the egg yolks and mix again for only a few seconds, just until the yolks are evenly incorporated. If you have no mixer, use a whisk or spatula.
  4. Add the milk powder and cornstarch, then add the wheat flour a little at a time, folding with a spatula until the dough comes together, no longer sticks to your hands and can be rolled.
  5. Portion the dough one by one with a 5 ml measuring spoon, or weigh out about 6-7 g each, so the tarts come out the same size.
  6. Roll each portion into a firm ball, fill with a ball of pineapple jam, seal tightly and roll smooth again.
  7. Bake in a preheated stove-top oven with the top vent open for about 35 minutes over medium-low heat. After 20 minutes swap the top and bottom trays so they bake evenly, then bake another 15 minutes. In an electric oven: 125C, bottom heat only, for about 20 minutes.
  8. Take them out and let the cookies cool completely.
  9. Make the glaze: mix 2 egg yolks, 1 tbsp cooking oil and egg-yellow food colouring until evenly combined.
  10. Brush the cookies with the yolk glaze, wait until it is touch-dry, then brush a second coat. For an even better finish you can go up to three coats.
  11. Once the glaze is dry, bake again briefly for 7-10 minutes over medium-low heat, or in an electric oven at 125C with top heat only. Remove and cool on a cooling rack.
