Steps

  1. Boil water and simmer tongue with bay leaves, salt, and baking soda for 40-60 minutes over low heat.
  2. Rinse tongue under running water. Clean with a knife. Scrape off the hard part on the tongue, then cut into large pieces.
  3. Cut galangal, ginger, red chili, green chili, and turmeric.
  4. In a blender, add garlic, shallots, ginger, galangal, turmeric, green chili, red chili, coriander, white pepper corns, peanuts, oil, coconut oil, and water. Blend until smooth.
  5. Sauté spice until fragrant. Add lemongrass, kaffir lime leaf, bay leaves, kaffir lime leaves, minang curry powder, and asam kandis. Cook until spice releases oil and turns golden.
  6. Add water, beef, tongue, salt, mushroom bouillon, beef bouillon powder, and sugar. Braise for 30-40 minutes.
  7. Set aside meat, tongue, and aromatics. Cut tongue and meat into small pieces, then skewer with satay sticks.
  8. Dip satay in broth and set aside.
  9. Combine water, rice flour, and all-purpose flour. Stir well and add to broth while straining. Cook until thickened.
  10. Heat grill, oil the surface, then grill satay until cooked on both sides.
  11. Sate Padang is ready to serve with ketupat and fried shallots as accompaniments.
