Viral Dubai Chocolate Pistachio Brownies with Homemade Kunafa

  1. Melt 40 g chocolate bar with 60 ml cooking oil, mix well, remove and set aside.
  2. Beat 2 eggs, 50 g sugar, 1/2 tsp SP, and a little vanilla with a mixer on high speed until pale, thick, and ribbon-like.
  3. Add 50 g sifted flour and 1 tbsp cocoa powder on low speed, then add the melted chocolate mixture, mix briefly and fold with a spatula until combined.
  4. Pour into an 18x18 cm pan lined with baking paper, level it, steam 15-20 minutes over low heat until cooked, remove and cool.
  5. Bake 250 g shelled pistachios at 150°C for 10-12 minutes, remove the skins while still warm.
  6. Grind the pistachios with a chopper until they release oil like a paste, reserve a little for topping, add a little salt and 20 ml oil, chop again until smooth like a spread.
  7. Mix 150 g flour, 100 g cornstarch, 2 tsp sugar, and 1/2 tsp salt, pour in 330 ml water gradually while stirring, add 2 tbsp oil, mix well, then strain.
  8. Pour the kataifi batter thin in a circular motion onto a hot pan over low heat, cook briefly, remove, repeat until the batter is used up.
  9. Cut the kataifi into small pieces, toast with 1 tbsp margarine over low heat until dry and browned.
  10. Melt 100 g white chocolate over hot water (heat off), stir until melted, then mix into the toasted kataifi and pistachio butter, add green coloring, mix well.
  11. Beat 100 g whipped cream powder with 200 ml cold milk using a mixer on medium speed until thickened.
  12. Arrange the brownies in a box, fill with the kataifi-pistachio mixture, level it, then add the whipped cream layer, chill in the fridge.
  13. Heat 125 ml milk, turn off the heat, add 250 g chocolate bar and 1 tbsp margarine, stir until melted and cooled, pour over the whipped cream, sprinkle with chopped pistachio.
