  1. Fry 200 g peanuts over medium heat until cooked and light brown (not burnt), then remove and drain.
  2. Process the peanuts with purple sweet potato and water in a chopper until fairly smooth (no need to be too fine).
  3. Grind the shallots, garlic, curly red chilies, and oil into a paste using a blender.
  4. Sauté the paste with kaffir lime leaves over medium-low heat until cooked and dry (no extra oil needed).
  5. Add the ground peanut-sweet potato mixture and water, and stir well.
  6. Season with salt, MSG, sugar, and palm sugar, stir well. Cook over medium then low heat until the peanut sauce thickens and releases oil, stirring occasionally.
  7. Sauté minced garlic and shallots until fragrant, turn off the heat, and set aside.
  8. Mix ground Spanish mackerel with salt, chicken bouillon powder, ground pepper, sugar, fish sauce, and ice water, and stir well.
  9. Add lightly beaten eggs and stir, then add the sautéed shallots and garlic and scallion, and stir well.
  10. Add flour and tapioca starch a little at a time, stirring until fully combined.
  11. Stuff halved, scored tofu with the batagor mixture, pressing it into the crevices; also fill wonton wrappers with the mixture and fold.
  12. Fry the tofu and wonton batagor over medium heat, flipping until golden brown, then remove and drain.
