  1. Coarsely chop the fried peanuts, boiled red chilies, boiled curly red chilies, and garlic for the peanut sauce.
  2. Heat oil, and re-sauté the ground peanut mixture together with a kaffir lime leaf until fragrant.
  3. Season with salt, pour in warm water, stir to the desired consistency, add sugar, and cook until the peanut sauce is done and deep red in color.
  4. Blend the mackerel tuna with crushed ice, whole fried garlic, dried anchovy powder, egg white, sugar, ground pepper, and cooking oil on high speed for 1-1.5 minutes until it forms an emulsion.
  5. Add salt, blend again until the mixture thickens, then add the sliced scallions, and stir well.
  6. Combine the fish mixture with the tapioca starch and flour, folding with a cutting motion until combined, adding a little water if needed.
  7. Stuff the halved fried triangular tofu with the fish mixture until firmly packed; also fill wonton wrappers with the mixture. Repeat until finished.
  8. Heat oil over low heat, fry the stuffed tofu and wonton batagor until the surface sets, then flip until cooked, remove and drain.
  9. Serve the batagor drizzled with the peanut sauce, and add lime juice, sweet soy sauce, and chili sauce on the side.
