Steps

  1. For the ginger fried chicken, put 8 ground garlic cloves, 2 teaspoons of salt, 1 teaspoon of turmeric powder and 2 tablespoons of ground coriander into a pot.
  2. Pour in 250 ml of water and stir until the salt dissolves.
  3. Grate 10 cm of ginger, squeeze out the juice, then scatter the ginger pulp into the pot.
  4. Add one whole chicken of about 1 kg cut into 12 pieces, then coat every surface with the seasoning.
  5. Cook over a very low flame with the lid on, count 20 minutes from the moment it boils, then take the lid off and continue for another 15 minutes.
  6. Turn off the heat and leave the chicken in the pot until it cools to room temperature, then drain it.
  7. Heat 400 ml of oil and fry the chicken until golden yellow.
  8. For the cuko, boil 500 ml of water with 40 g of tamarind, 200 g of palm sugar, 2 tablespoons of granulated sugar, one and a quarter teaspoons of salt and 6 ground garlic cloves until everything dissolves and comes to the boil.
  9. Add 4 ground bird's eye chillies, extract the tamarind liquid, then add 1 teaspoon of vinegar.
  10. For the pempek dough, dissolve 2 tablespoons of dried shrimp powder, 2 teaspoons of salt and half a teaspoon of ground pepper in hot water, then strain it.
  11. Pour a total of 150 ml of boiling water into 125 g of plain flour while stirring until it becomes a smooth paste.
  12. Bring 1250 ml of water with 1 tablespoon of salt to the boil for cooking the pempek.
  13. Blitz 350 g of Spanish mackerel with 2 egg whites and 2 tablespoons of cooking oil until the mixture becomes light and white.
  14. Mix the fish mixture into the flour paste until they come together, then add 250 g of sago flour and a quarter teaspoon of baking powder, folding it in with a cutting motion.
  15. Shape part of the dough into logs with the help of a little flour, boil them until they float, lift them out, then brush with a little oil so they do not stick together.
  16. For the kapal selam, take about 50 to 60 g of dough, shape it into a bowl, fill it halfway with 2 beaten eggs seasoned with a quarter teaspoon of salt, then seal it so it does not leak.
  17. Boil the pempek until they float, then continue for 5 to 10 minutes, lift them out and let them cool a little.
  18. Heat 500 ml of oil and fry the pempek until golden, slice them up, and serve with the cuko, 100 g of yellow noodles, chopped cucumber and 3 tablespoons of dried shrimp powder.
