Stir-Fried Water Spinach with Belacan (Shrimp Paste)

  1. Chop garlic, shallots, and seeded red chilies to about 1 cm pieces.
  2. Also slice 2 cm galangal.
  3. Add 2 tsp roasted shrimp paste, 1/4 tsp Desaku turmeric powder, 1/2 tsp Ladaku ground pepper, and 1 tsp salt, pound coarsely (pound the galangal finer).
  4. Heat 5 tbsp cooking oil, then prepare 5 curly chilies sliced diagonally.
  5. Add the pounded seasoning, saute until the aroma is cooked through and the shrimp paste smells fragrant.
  6. Add the diagonally sliced chilies and 1 tbsp fish sauce, then 2 tbsp sweet soy sauce (make sure it hits the hot oil until it bubbles).
  7. Add 2 tsp sugar, stir, then add 50 ml water, let it come to a boil.
  8. Add the water spinach stems first, stir-fry for about 10 turns.
  9. Add the 250 g water spinach leaves, stir briefly, turn off the heat, and keep flipping so it cooks from the residual heat of the seasoning (cooks from the top).
  10. Serve the stir-fried water spinach on a plate.
