Spicy Sautéed Potatoes with Chicken Liver and Gizzard (Sambal Goreng Kentang Hati Ampela)

- Rebus hati ampela dengan air, garam, kunyit bubuk, dan ketumbar bubuk hingga matang dan empuk (sekitar 10 menit).
- Haluskan bawang merah, bawang putih, dan tomat menggunakan blender.
- Panaskan minyak, tumis bumbu halus hingga harum dan matang, aduk terus agar matang merata.
- Potong-potong hati dan ampela yang sudah matang (ampela agak memanjang, hati dadu).
- Larutkan bubuk sambal goreng instan dengan air, aduk rata, lalu masukkan ke bumbu yang sedang ditumis.
- Bumbui dengan garam dan gula pasir, aduk rata hingga warnanya lebih pekat.
- Masukkan hati ampela yang sudah dipotong, aduk hingga bumbu meresap.
- Masukkan petai yang sudah dibelah dua, biarkan aromanya keluar.
- Masukkan kentang goreng, aduk hingga tertutup bumbu dan meresap, lalu sajikan.

- Boil the chicken liver and gizzards with water, salt, turmeric powder, and coriander powder until cooked and tender (about 10 minutes).
- Grind the shallots, garlic, and tomato in a blender.
- Heat the oil and sauté the ground spice paste until fragrant and cooked, stirring constantly for even cooking.
- Cut the cooked liver and gizzards into pieces (gizzards slightly elongated, liver diced).
