  1. Combine 160 g of plain flour, half a teaspoon of baking powder, half a teaspoon of baking soda, half a teaspoon of ground cinnamon, a quarter teaspoon of vanilla and a quarter teaspoon of salt, then sift it.
  2. Peel 4 ripe raja bananas, about 150 g, then mash them with a fork.
  3. Beat 2 eggs with 2 tablespoons of granulated sugar and 5 tablespoons of palm sugar until evenly combined.
  4. Add the flour mixture, stir through, then add the mashed banana.
  5. Pour in 125 ml of coconut oil a little at a time, stirring until the oil is completely absorbed.
  6. Brush a tin with coconut oil, pour in the batter, then steam for 25 minutes with a cloth under the steamer lid.
  7. Take the cake out, then slice it and serve.
  8. For the salted fish opor, grind 8 shallots and 4 garlic cloves.
  9. Heat 6 tablespoons of cooking oil and fry the spice paste until fragrant and cooked through.
  10. Add 3 kaffir lime leaves and 1 stalk of lemongrass that has been split and bruised, then stir until fragrant.
  11. Mix 1 sachet of opor spice powder into 500 ml of medium-thick coconut milk and stir until dissolved.
  12. Pour the seasoned coconut milk into the pan, then add half a teaspoon of salt and 1 teaspoon of granulated sugar.
  13. Add 300 g of salted fish that has been fried until dry and 400 g of fried tempeh, then cook until the seasoning soaks in.
  14. Add 20 petai beans split in half and 20 green bird's eye chillies, then stir through and cook over low heat.
  15. Pour in 250 ml of thick coconut milk, keeping it from splitting, cook until it comes back to the boil, then take it off the heat and serve.
