Ikan Asin Batanak (Banjar-Style Salted Fish in Coconut Milk)

- Potong ikan asin yang sudah direndam menjadi dua atau tiga bagian.
- Memarkan lengkuas dan sereh, sisihkan daun salam, dan sisir gula aren Banjar.
- Rajang bawang putih, bawang merah, cabai hijau, cabai merah, belimbing sayur, dan potong tomat menjadi empat bagian.
- Masak 500 ml santan sedang bersama lengkuas, sereh, dan daun salam hingga harum dan mendidih.
- Masukkan bawang putih dan bawang merah rajang, biarkan hingga bau langunya hilang dan aromanya harum.
- Masukkan gula aren Banjar dan gula pasir, lalu masukkan ikan asin, masak hingga rasa asinnya keluar.
- Tambahkan Ladaku merica bubuk dan Desaku kunyit bubuk, aduk rata, masak hingga matang.
- Masukkan cabai merah dan cabai hijau, masak sampai layu.
- Masukkan belimbing sayur dan tomat, aduk sebentar hingga tingkat kematangannya sama.
- Terakhir masukkan 250 ml santan kental, masak hati-hati sampai hampir mendidih agar santan tidak pecah, lalu matikan api.
- Sajikan ikan asin batanak dengan sedikit garnish.

- Cut the soaked salted fish into two or three pieces.
- Bruise the galangal and lemongrass, set aside the bay leaves, and shave the Banjar palm sugar.
- Slice the garlic, shallots, green chilies, red chilies, and star fruit vegetable, and cut the tomatoes into quarters.
- Cook 500 ml medium coconut milk with the galangal, lemongrass, and bay leaves until fragrant and boiling.
- Add the sliced garlic and shallots, let it cook until the raw smell is gone and it's fragrant.
- Add the Banjar palm sugar and granulated sugar, then add the salted fish, cook until its saltiness comes out.
- Add Ladaku ground pepper and Desaku turmeric powder, stir well, cook until done.
- Add the red and green chilies, cook until wilted.
- Add the star fruit vegetable and tomatoes, stir briefly until evenly cooked.
- Finally add the 250 ml thick coconut milk, cook carefully until nearly boiling so the coconut milk doesn't separate, then turn off the heat.
- Serve the ikan asin batanak with a little garnish.
