Steps

  1. Combine 225 g of black glutinous rice flour, 25 g of rice flour, 1 teaspoon of baking powder, half a teaspoon of vanilla and half a teaspoon of salt, then sift it.
  2. Whip 175 g of sugar with 5 eggs and 1 teaspoon of emulsifier until pale, risen and thick.
  3. Mix 4 tablespoons of sweetened condensed milk, 75 ml of coconut milk and 4 tablespoons of honey until combined.
  4. Fold the flour mixture into the whipped eggs until it comes together.
  5. Pour in the coconut milk and honey mixture, fold it through, then add 70 g of melted margarine a little at a time, stirring until smooth.
  6. Brush a tin with coconut oil, pour in the batter, then steam it for 30 minutes.
  7. Take the cake out, turn it out of the tin once it has cooled to warm, then slice it and serve it drizzled with honey.
  8. For the chicken and potato opor, grind 8 shallots and 4 garlic cloves.
  9. Heat 6 tablespoons of cooking oil and fry the spice paste until it turns golden.
  10. Add 1 stalk of lemongrass cut to 10 cm, split and bruised, along with 3 kaffir lime leaves, then fry until fragrant.
  11. Mix 1 sachet of opor spice powder into 500 ml of medium-thick coconut milk and stir until dissolved.
  12. Pour the seasoned coconut milk into the pan and stir to combine.
  13. Add half a teaspoon of salt and 1 teaspoon of granulated sugar.
  14. Add 400 g of cut chicken and 400 g of potato cut into quarters, since they take the same time to cook.
  15. Once everything is nearly done, turn the heat down and add 20 green bird's eye chillies.
  16. Pour in 250 ml of thick coconut milk, cook until it comes back to the boil, then take it off the heat and serve.
