  1. Cut the chicken (500 g, one whole chicken) into 12 pieces or to your preference.
  2. Dissolve 1 sachet of Desaku marinade seasoning in 5 tbsp water, stir well, then pour it over the chicken and let it marinate.
  3. Get the aromatics ready: smash the ginger, galangal, and lemongrass; slice the garlic and shallots; have the kaffir lime leaves and bay leaves ready.
  4. Heat 4 tbsp oil, sauté the garlic until it turns golden, then add the shallots and cook until their moisture releases and the mixture turns fragrant and cooked through.
  5. Add the lemongrass, ginger, galangal, kaffir lime leaves, and bay leaves; sauté until fragrant.
  6. Add the marinated chicken, stir to combine until it changes color, then lower the heat and let one side brown for extra flavor.
  7. Pour in 250 ml water and let it reduce, to build the broth and let the seasoning soak into the chicken.
  8. Pour in another 750 ml water.
  9. Add 1/2 tsp sugar and 1 tsp salt.
  10. Add the green tomatoes, red tomato, bird's-eye chilies, and leek; stir to combine.
  11. Add the bilimbi and Thai basil, pressing them down so they're submerged (this keeps the basil from turning black).
  12. Add 1/2 tsp ground pepper, stir, and cook until the vegetables are done.
  13. Turn off the heat, stir in the lime juice, and serve.
