Steps

  1. Wash the meat well, then drain until no water is left.
  2. Combine all of ingredients 2 into an even marinade.
  3. Coat the meat with the marinade, stirring gently until every surface is covered. Let it rest for 30 minutes so the spices soak in.
  4. Bring 1,250 ml of water to a boil in a pot.
  5. Add the sliced shallots, galangal, lemongrass and bay leaves. Boil for 2 minutes until the spices release their aroma.
  6. Add the meat with all of its marinade. Rinse the marinade bowl with a little of the boiling water, then pour it into the pot so no seasoning is wasted.
  7. Cook over low heat for 70 minutes with the pot covered. Once the meat is tender, add the sliced large chili, green tomatoes or bilimbi, and the red tomato. Cook for another 10 minutes.
  8. Turn off the heat, then add the lemon basil. Stir gently until the basil wilts in the hot broth.
  9. Serve the yellow broth asem-asem with beef bones and trimmings while hot.
