  1. Bring 1.8 litres of water to a boil in a pot.
  2. Prepare 70 g of palm sugar.
  3. Thinly slice 6 cloves of garlic and 10 shallots.
  4. Bruise 1 stalk of lemongrass and tie it into a knot.
  5. Set out 3 bay leaves and 3 kaffir lime leaves, and bruise 3 cm of galangal.
  6. Cut 6 green tomatoes into quarters.
  7. Prepare 12 whole bird's eye chilies and 3 tbsp of lime juice, or star fruit if you have it.
  8. Cut 500 g of beef shank and brisket into small cubes of about 2 cm.
  9. Put the beef into the boiling water and bring it back to a boil.
  10. Heat a wok with 2 tbsp of vegetable oil and fry the sliced shallots until slightly wilted.
  11. Add the sliced garlic and fry briefly until it wilts too.
  12. Add the lemongrass, bay leaves, lime leaves and galangal, fry until fragrant, then turn off the heat.
  13. Skim off the foam that rises in the beef pot.
  14. Tip the fried aromatics into the pot with the beef.
  15. Add 5 tbsp of sweet soy sauce and the palm sugar.
  16. Stir in 3 tbsp of lime juice.
  17. Season with 1/2 tsp white pepper, 1/2 tsp mushroom bouillon and 1 tsp salt.
  18. Simmer over low heat for about 90 minutes until the beef is tender.
  19. Add the bird's eye chilies and green tomatoes at the end so the tomatoes do not fall apart.
  20. Cook for about 5 minutes more, then taste and adjust the seasoning.
  21. Serve with hot white rice.
