  1. Mix 100 g granulated sugar with one sachet of plain jelly powder and stir until combined.
  2. Boil 900 ml water, turn off the heat, then steep 3 jasmine tea bags for 5 minutes and lift the bags out.
  3. Add the sugar and jelly mixture, stir it through, turn the heat back on and cook until it boils.
  4. Pour it into a container and leave it to set.
  5. For the grass jelly, cook one sachet of grass jelly powder, 150 g granulated sugar and 700 ml water over medium heat until boiling, then pour into moulds and leave to set.
  6. For the soaking syrup, cook 150 g granulated sugar, 3 pandan leaves and 500 ml water until the sugar dissolves and boils, then strain it and let it cool.
  7. Cut 250 g orange sweet potato and 250 g purple sweet potato into pieces, then steam about 25 minutes until tender.
  8. For the orange sweet potato, add 1 tbsp granulated sugar, mash it with a fork, then work in 75 g tapioca starch a little at a time.
  9. Take a small piece of the dough, boil it until it floats, mix it back into the dough, then knead until it no longer sticks to your hands.
  10. For the purple sweet potato, add 2 tbsp granulated sugar, mash it, then knead in 75 g tapioca starch added gradually.
  11. Take a small piece of the purple dough, boil it until it floats, return it to the dough and knead until even.
  12. Roll both doughs into long ropes on a work surface, not too thick, then cut them into small pieces.
  13. Coat the QQ ball pieces in tapioca starch, then sift off the excess flour.
  14. Boil the QQ balls in boiling water until they float and are cooked, drain them, then soak them in the sugar syrup.
  15. Layer ice cubes, chopped tea jelly, QQ balls and grass jelly in a glass, then pour over condensed milk and evaporated milk as the creamy sauce.
