Homemade Soy Milk with Ginger and Pandan

  1. Blend 500 g of soybeans that have been washed, soaked overnight and drained together with 2 liters of clean water, working in several batches.
  2. Squeeze the blended mixture through a cloth strainer, working with small amounts at a time so it is easier to press.
  3. After pressing do not throw away the pulp, but set it aside in a clean container.
  4. Mix the pulp from the first pressing with 800 ml of clean water; you can skip this step if you want thicker soy milk.
  5. Press the pulp again then combine that liquid with the first pressing.
  6. Add 70 g of sliced ginger to the pot of soy milk.
  7. Add 8 pandan leaves that have been shredded and knotted.
  8. Turn the stove to low heat and keep stirring.
  9. Skim off and discard the foam on the surface.
  10. Once it boils add 300 g sugar, stir until dissolved, then turn off the heat and the soy milk is ready to drink.
