Oat Sugar Cookies, No Cutter Needed

  1. Blitz 100 g oats only briefly so the texture stays a little coarse and you can taste it in the cookie.
  2. Take a large bowl and add 200 g butter, 50 g margarine and 150 g fine granulated sugar.
  3. Stir briefly until combined.
  4. Switch to a whisk and beat until the mixture is smooth and soft.
  5. Add 2 egg yolks and half an egg white.
  6. Mix until the eggs and fats are fully combined.
  7. Add the blitzed oats.
  8. Mix again until evenly combined.
  9. Add 25 g milk powder and 15 g cornstarch, then mix once more until combined.
  10. Add 400 g low protein flour gradually.
  11. Stop adding flour once the dough no longer sticks to your hands; you may not need all of it.
  12. Line a tray with baking paper, and get two large sheets of plastic ready for rolling the dough between.
  13. Take a portion of the dough and press it together firmly.
  14. Flatten it into a square so it rolls out more easily.
  15. Cover the dough with plastic, then roll it out to about 0.3 cm thick.
  16. Cut the dough with a fluted knife, an ordinary knife, or a scraper.
  17. Cut pieces of roughly 3x5 cm, or any size you prefer.
  18. Set the trimmings aside to roll out again later.
  19. Mix 3 egg yolks with 1 tsp water so the glaze is not too thick, then stir well.
  20. Brush the glaze evenly over the surface of the cut dough.
  21. Sprinkle 50 g coarse granulated sugar over the top.
  22. Move the cut pieces onto the tray lined with baking paper.
  23. Preheat the oven for 10 minutes at 180 degrees Celsius with top and bottom heat.
  24. Bake for about 50 minutes or until done, adjusting for your own oven.
  25. If you bake two trays at once, swap the upper and lower trays halfway through.
  26. Once baked, take them out and let them cool completely.
