Cakwe, Chinese Fried Dough Sticks

Steps

  1. Prepare a large enough bowl, add 250 g all purpose flour, 6 g baking powder, 3 g baking soda and 3 g salt, then stir until evenly combined.
  2. Make a well in the middle then pour in 165 g room temperature water and 10 g vegetable oil.
  3. Work the dry ingredients into the wet ones slowly while stirring until all the dry ingredients are absorbed.
  4. Carry on mixing by hand without kneading, just until all the dry ingredients are absorbed.
  5. Wrap the dough in plastic wrap and rest it for 20 minutes.
  6. After 20 minutes move the dough onto a work surface brushed with vegetable oil, and oil your palms too so it does not stick.
  7. Spread the dough out into a square then fold the left and right sides into the middle.
  8. Spread it out again then fold it to the middle again, repeating the fold and spread three times.
  9. Wrap it in plastic wrap again and rest the dough for four hours.
  10. After four hours dust the work surface with flour, move the dough onto it, and dust it lightly so it does not stick.
  11. Gently stretch the dough into a long strip, without pulling too hard so it does not turn tough.
  12. Divide the dough into 12 strips roughly two to three centimetres wide.
  13. Dust and coat both sides of each strip with flour so they do not stick together when stacked.
  14. Heat the frying oil over high heat until hot, testing it with a scrap of dough; if it floats up straight away the oil is hot enough, then lower to medium heat.
  15. Press a line down the centre of each strip with a chopstick, stack two strips facing each other, then press again with the chopstick so they stick together.
  16. Stretch the pair lengthwise then lower it into the oil from the middle.
  17. Turn it over quickly and repeatedly using chopsticks.
  18. Once the dough stops puffing, fry until both sides are browned, then take it out and drain.
  19. Repeat the same steps until all the dough is fried, keeping the oil temperature neither too high nor too low.
