Tho Kue, Savoury Glutinous Rice Dumplings

Steps

  1. Toast 50 g of peanuts until done using an air fryer or a pan.
  2. Crush the peanuts briefly, not too finely, then set them aside in a bowl.
  3. Process 6 cloves of garlic, 6 shallots and 40 g of dried shrimp together in a food processor, then set aside.
  4. Cut 3 shiitake mushrooms into small pieces, discarding the stems, then set them aside.
  5. Cut 30 g of salted radish into thin matchsticks.
  6. Heat a little vegetable oil then saute the mushrooms and salted radish until browned and dry, then take them out and set them aside in a bowl.
  7. In the same pan heat enough oil, add the processed garlic, shallots and dried shrimp, saute until fragrant and browned, then set them aside in the same bowl.
  8. Put 500 g of glutinous rice into a rice cooker, add 1 tbsp sugar, 1 tsp mushroom bouillon, 1.5 tsp pepper, 2 tbsp oyster sauce, half a tablespoon of light soy sauce, 1 tbsp sesame oil and all the reserved sauteed ingredients.
  9. Stir until combined, then pour in 600 ml of boiling water and stir again.
  10. Close the rice cooker and press start.
  11. Once it boils open the lid, add the peanuts, stir them in, then close it again and let it cook until the water has dried up.
  12. Open it again and stir with a pair of chopsticks, then close it and let it finish cooking.
  13. Once the alarm sounds open the lid and stir again, then close it and leave it for 10 minutes, then take it out and let it cool.
  14. In a large enough bowl combine 350 g rice flour and 150 g tapioca starch then stir until mixed.
  15. Pour in 500 ml of the water first then stir until there are no lumps of flour left.
  16. Once the batter is smooth, pour in the remaining 800 ml of water then stir until combined.
  17. Strain the batter into a pan, add 50 ml vegetable oil and 1 tsp salt, then stir.
  18. Turn the heat to medium low then cook while stirring constantly until the dough clumps and is evenly cooked with no wet batter left.
  19. Once the dough is evenly cooked turn off the heat, then work it with a sturdy spatula or knead it with gloved hands until smooth.
  20. Move the dough to a wide dish so it cools faster.
  21. Heat plenty of oil then fry 10 cloves of garlic until golden brown, drain them, and keep the oil separately for brushing the dumplings.
  22. Prepare a work surface dusted with tapioca starch, take a portion of dough, then coat it with tapioca starch until it no longer sticks to your hands.
  23. Dust the tho kue mould lightly with tapioca starch, not too much.
  24. Roll the dough into a ball then flatten it from the edge toward the centre until it forms a cup shape.
  25. Add enough filling then seal it tightly.
  26. Place it in the mould with the smooth side down and the sealed side up, press it in, then neaten the edges.
  27. Take a banana leaf brushed with a little oil and lay it over the dumpling, then trim it to follow the shape.
  28. Spray with cooled boiled water so the skin comes out softer, then steam for 15 minutes or until cooked, opening the lid every three minutes so the dumplings do not spread.
  29. Brush the surface with the garlic oil so they do not stick together and look glossier.
  30. Top with the fried garlic then serve.
