Purple Sweet Potato Klepon

Steps

  1. Steam 200 g of grated coconut with 1/3 tsp salt and 3 cut up pandan leaves for 10 minutes, then remove the pandan leaves.
  2. Cut the purple sweet potato into pieces, not too large so they cook faster.
  3. Steam the purple sweet potato for 15 minutes or until tender.
  4. While waiting, finely shave 200 g of palm sugar so it is easier to fill and melts better once cooked.
  5. Check the sweet potato with a fork, and once it is tender take it out of the steamer.
  6. Mash the sweet potato while it is still hot using a mortar or a chopper.
  7. Weigh out 350 g of the mashed sweet potato.
  8. In a bowl add 325 g glutinous rice flour, 50 g rice flour and 1 tsp salt, then stir briefly.
  9. Add the 350 g of weighed sweet potato then mix with your hands until combined.
  10. Pour in 300 to 325 ml of room temperature water bit by bit until the dough reaches the right texture, neither too dry nor too soft.
  11. Take a portion of dough, roll it into a ball, then make a hollow in the centre with your index finger.
  12. Add the palm sugar filling, seal and compact it, then roll it into a ball again quickly so the dough does not crack.
  13. Boil water for the klepon together with pandan leaves for extra aroma, then lift out the leaves.
  14. Once it boils lower the heat then drop in the shaped klepon.
  15. Boil until the klepon float, then leave them a little longer so the skin is fully cooked before taking them out.
  16. As soon as they come out roll them in the grated coconut while the skin is still sticky so the coconut clings.
