Doko Doko Berendam, Pontianak Sticky Rice Dumplings in Coconut Sauce

Steps

  1. Put 165 g finely shaved palm sugar, 1/2 tsp salt and 50 ml water in a saucepan, then cook until the sugar dissolves.
  2. Turn off the heat, then strain the syrup to catch any grit from the sugar.
  3. Add 250 g grated coconut and 2 pandan leaves to the syrup.
  4. Cook over medium low heat until the coconut is cooked and dry.
  5. Move the filling to a bowl and let it cool enough to use.
  6. Line the steamer with banana leaf, then brush it with a little vegetable oil.
  7. In another bowl combine 250 g glutinous rice flour, 50 g rice flour and 1/4 tsp salt, mixing well.
  8. Pour in 80 ml instant coconut milk.
  9. Add only part of the water at first, not all of it at once.
  10. Add 2 tbsp of settled pandan juice, or use pandan paste.
  11. Mix until combined, then add the rest of the water little by little until the dough can be shaped.
  12. The dough is ready when it feels soft and no longer cracks as you roll it.
  13. Take about 25 g of dough and press the centre to make a hollow.
  14. Add the palm sugar coconut filling, then seal it closed.
  15. Shape it into an oval, the classic Pontianak doko doko shape, and repeat until all the dough is used.
  16. Steam for 20 minutes over medium low heat with the water already boiling.
  17. Every 5 minutes, lift the lid and wipe off the condensation so the skins do not puff up and turn rough.
  18. Once cooked, brush them lightly with vegetable oil so they do not stick together.
  19. For the sauce, put 1 tbsp sugar, 2/3 tsp salt and 1/2 tbsp cornstarch in a saucepan and stir briefly.
  20. Pour in 250 ml instant coconut milk.
  21. Add 400 ml water.
  22. Cook while stirring constantly until it boils; add more cornstarch if you prefer a thicker sauce.
  23. Take it off the heat, then serve the doko doko with the warm coconut sauce.
