Old School Foam Pudding Cake

Steps

  1. Prepare a round pan 20 cm across and 7 cm deep, grease the base and sides with butter or margarine, then set it aside.
  2. Melt 100 g butter over a pot of boiling water, turn off the stove, stir until two thirds has melted, lift it off, then keep stirring until fully melted.
  3. Crack 2 whole eggs into a mixing bowl, then separate 5 more eggs and add their yolks to the bowl.
  4. Weigh out 150 g of the egg whites for the pudding and set them aside.
  5. Add 85 g sugar and 1 tsp SP emulsifier to the eggs, then beat at the highest speed until fluffy and thick enough to leave a trail.
  6. Sift in 5 g cornstarch and 80 g flour in three batches, stirring each batch first then beating briefly at the lowest speed so it does not overmix.
  7. Stir with a spatula to make sure the flour is fully incorporated.
  8. Add 1 tsp vanilla extract and 1 tbsp condensed milk to the melted butter and stir until combined.
  9. Stir a little batter into the butter using the tempering technique, then pour it into the main batter and fold briefly until fully combined.
  10. Pour the batter into the prepared pan.
  11. Bake at 175 degrees Celsius with top and bottom heat for 25 minutes or until done, then turn it out of the pan straight away.
  12. Beat 150 g egg whites at medium speed until very foamy, then add 50 g sugar in three batches and beat until stiff.
  13. Prepare a pot, add 2 packs of agar agar powder, pour in a little milk, then stir until the agar agar dissolves.
  14. Pour in the rest of the milk to make 900 ml in total, add 60 ml cocopandan syrup, then add about six drops of dark red food coloring or as much as you like.
  15. Turn on the heat and cook until it boils.
  16. Once it boils turn off the heat and pour it straight into the beaten egg whites while mixing until fully combined.
  17. Prepare a round pan 22 cm across and 7 cm deep, then spoon 5 soup spoons of the pudding mixture into it.
  18. Chill it in the fridge for about 7 to 8 minutes until that layer sets.
  19. Stir the pudding mixture until smooth again, then pour on 2 soup spoons to act as the glue between the cake and the pudding.
  20. Place the cake in the centre of the pan.
  21. Pour the pudding around the sides of the cake first, and once the sides are filled pour the rest over the top until it reaches the rim of the pan.
  22. Chill it for about 2 hours until the pudding is fully set, then unmould it and slice.
