Grilled Turmeric Chicken

Steps

  1. Blend all the spice paste ingredients; cut the hard ones like ginger, galangal, turmeric and lemongrass into pieces first.
  2. Add 100 ml water, not too much, then process until the paste is completely smooth.
  3. Pour the paste straight into a pan with no extra oil, then cook until it dries out.
  4. Once the paste is dry, add a little oil.
  5. Add 3 bay leaves crushed in your hand and 5 kaffir lime leaves, then saute until fragrant.
  6. Add 6 chicken thigh pieces.
  7. Pour in 1 litre of water, keeping a little back to rinse out the blender jug; make sure the chicken is submerged.
  8. Cover the pan and cook until it boils.
  9. Add 35 g palm sugar, 2.5 tsp salt, 1 tsp mushroom stock powder and 1 tsp pepper.
  10. Add 60 g non dairy creamer and stir until evenly combined.
  11. Cook over medium low heat, turning the pieces occasionally but not too often so the chicken does not fall apart.
  12. After about half an hour, once the liquid has halved, add 3 tbsp sweet soy sauce and the juice of a sonkit citrus.
  13. Stir gently until combined, then keep cooking until the chicken is truly tender and the sauce has reduced.
  14. After about 1 hour, once the sauce has reduced right down, turn off the stove.
  15. Once it is no longer hot, transfer it to a container and refrigerate, or freeze it in single cooking portions.
  16. Use the leftover sauce as a basting glaze, adding a little margarine for extra aroma and a shinier finish.
  17. Line the baking tray with aluminium foil so the dripping sauce does not burn onto it.
  18. Grill at a high temperature, here 230 degrees Celsius, so it does not take too long.
  19. Once the surface is half dry, brush on plenty of the glaze so the coating is thick.
  20. Grill again until browned, then turn it over to the other side.
  21. Brush generously with the glaze again, then grill until both sides are browned.
