Super Soft Steamed Pumpkin Buns

Steps

  1. Peel and cut the pumpkin with a sharp knife; keep the pieces thin so they steam tender quickly.
  2. Steam the pumpkin until tender; the steamer water does not need to be boiling beforehand.
  3. Test it with a fork; once it is soft it is ready to come out.
  4. Mash the pumpkin while it is still hot, then push it through a sieve so it is completely smooth.
  5. Weigh out 100 g of pumpkin puree; keep the rest in a clean sealed container in the fridge.
  6. Move the puree into a large bowl.
  7. Warm 120 ml UHT milk over low heat, not to boiling, just until warm.
  8. Turn off the heat and pour the milk into the bowl with the pumpkin puree.
  9. Crack in 1 small egg, then stir until evenly combined.
  10. Add 5 g instant yeast, 20 g sugar and 3 g salt, then stir until everything dissolves.
  11. Add 325 g medium protein flour and 25 g milk powder.
  12. Stir with a circular motion, folding from the bottom upwards.
  13. Switch to mixing with gloved hands, because the dough gets very sticky.
  14. There is no kneading; just work the remaining dry flour into the dough until everything is combined.
  15. Add 40 g butter or margarine, then work it in by squeezing the dough through your fingers.
  16. Once the butter is fully worked in, the dough stops being sticky.
  17. Round the dough, cover it with cling film, then rest for 20 minutes.
  18. After 20 minutes, do the pull, fold and press motion 10 times.
  19. Round the dough again.
  20. Oil the base of the bowl so the dough does not stick.
  21. Cover again with cling film, then rest a second time for 20 minutes.
  22. After 20 minutes, repeat the pull, fold and press 5 times.
  23. Round the dough again and prove for about 45 minutes until doubled in size.
  24. Meanwhile, brush the base and sides of the foil moulds thinly with butter.
  25. Once doubled, press the dough down to deflate it.
  26. Divide and weigh the dough into 60 to 65 g pieces, adjusting to the size of your moulds.
  27. Round each piece into a ball.
  28. Cover and rest again for 10 minutes.
  29. Take the piece you rounded first and flatten it.
  30. Turn it over so the smooth side faces down, then thin out the edges.
  31. Add a spoonful of chocolate spread.
  32. Gather all the edges into the centre, then pinch and twist until sealed tight so the filling cannot leak out while steaming.
  33. Put each bun into a prepared mould, then cover so the dough does not dry out.
  34. Leave them until doubled in size.
  35. Set up the steamer water, adding a few torn pandan leaves for extra fragrance.
  36. Line the bamboo steamer with a cloth so the steam does not hit the buns too hard from below.
  37. Arrange the buns in the steamer in the order you shaped them, then cover.
  38. Steam over medium heat for 10 minutes.
  39. Turn the buns out of the moulds; with the moulds greased they will not stick at all.
  40. Set the buns on a cloth and cover them so they do not dry out.
  41. Once they are no longer too hot, they can go into a plastic bag, sealed tight.
