Steps

  1. For the white batter, put 40 g rice flour, 1 tbsp granulated sugar, and 1/4 tsp salt into a pot.
  2. Pour in half of the 500 ml thick coconut milk and stir until evenly combined, then add the rest of the coconut milk and stir again until even.
  3. Cook the batter over low heat while stirring constantly until thickened, thick but not as dense as bubur sumsum.
  4. Turn off the heat, transfer the batter to another bowl, cover it with plastic wrap or keep it in an airtight container so no skin forms on top, then set it aside.
  5. Next put 1 egg, 140 g granulated sugar, 1/2 tsp vanilla powder, 140 g all-purpose flour, and 250 ml thick coconut milk into a blender.
  6. Blend until the sugar has dissolved and the batter is evenly combined, then set it aside.
  7. For the green batter, put 30 g rice flour, 100 ml pandan extract made from 4 pandan leaves blended with 100 ml water and then strained, and 1/4 tsp salt into a pot, then stir until evenly combined.
  8. Add 125 ml thick coconut milk, then stir until evenly combined.
  9. If the color looks too pale, add pandan paste as needed then stir again until evenly combined.
  10. Cook the green batter over low heat while stirring constantly so it does not burn, until it thickens to the texture of soy sauce.
  11. Once the batter starts to thicken, add the blended batter from earlier then cook again while stirring constantly until the batter thickens to the texture of soy sauce.
  12. Turn off the heat, then strain the batter to make sure there are no lumps.
  13. Brush the moulds with a thin layer of cooking oil.
  14. Pour the green batter into the moulds only three quarters of the way, not to the top, leaving room for the white batter.
  15. Pour the white batter right in the center on top of the green batter using a long-spouted squeeze bottle or a snipped piping bag, and repeat until all are filled.
  16. Cover the tray with plastic wrap and seal it, then prick the plastic with a satay skewer slightly below the top so the air pressure from inside can escape.
  17. Steam over already boiling water on medium heat for about 20 minutes until cooked, and line the steamer lid with a clean cloth so condensation does not drip into the batter.
  18. After 20 minutes, take the tray out of the steamer then remove the plastic.
  19. Let the cakes cool completely, and they may be chilled in the fridge once the steam has gone, only then turn them out of the moulds so they do not break.
