Ingredients

Topping:

Steps

  1. Put 2 medium eggs and 120 g granulated sugar into a blender.
  2. Add 250 g potato that has been steamed until soft and 1 tbsp sweetened condensed milk.
  3. Add 125 g wheat flour, 1/2 tsp salt, 1/2 tsp vanilla powder, and 250 ml medium-thick coconut milk.
  4. Blend until everything is evenly combined, but not too long and not too fast, so no holes appear on top of the cakes.
  5. Add 50 g melted margarine, then blend again until evenly combined.
  6. Switch off the blender and pour the batter into a bowl.
  7. Soak the raisins in warm water for about 3 to 5 minutes so they plump up, then drain.
  8. Set up the kue lumpur pan, turn the heat to its lowest setting, heat the pan, then brush it thinly with margarine.
  9. Once the pan is hot, pour in the batter to only half or three quarters of each mould so it does not stick to the lid as it rises.
  10. Cook until the top dries slightly, then cover the pan.
  11. Once the top of the cakes has dried a little, scatter over the raisins.
  12. Cover the pan again and carry on cooking until done, wiping the lid with a dry cloth if it beads with moisture.
  13. Turn the pan now and then so the cakes cook evenly.
  14. Once the tops are dry and the edges are golden brown, turn off the heat and lift the cakes out of the pan.
  15. Brush the pan thinly with margarine again, then cook the remaining batter the same way until it is all used up.
