Open offline saves

Ingredients

green banana batter:

Sauce (fla):

To serve:

Steps

  1. Put the flour and sugar into a bowl, then stir until evenly combined.
  2. Add the salt, margarine, pandan paste, instant coconut milk, and water.
  3. Stir until the batter is smooth and lump free; if the colour is not green enough you may add more pandan paste and stir again.
  4. Cook the batter over medium heat while stirring constantly until it thickens and becomes firm, then turn off the heat.
  5. Prepare plastic wrap or banana leaf, take a little of the dough, place it on the wrap, then flatten it.
  6. Place one banana in the middle of the dough, then cover and press so the banana is tightly wrapped.
  7. Shape the dough neatly until it resembles a banana, then roll it up in the plastic wrap; repeat until all the bananas are wrapped.
  8. Steam in a steamer with already boiling water for about 15 minutes over medium heat, being careful not to overcook.
  9. Remove the pisang ijo from the steamer, then let it cool completely so it does not tear easily.
  10. For the sauce, put the pandan leaves, cornstarch, sugar, salt, and vanilla powder into a bowl.
  11. Pour in the coconut milk a little at a time while stirring until evenly combined.
  12. Transfer the sauce mixture to a pot and cook over low heat while stirring constantly until thick and bubbling, then turn off the heat and let the steam escape.
  13. Shave the ice, or use regular ice cubes if you do not have an ice shaver.
  14. Pour enough shaved ice into a serving glass.
  15. Pour enough of the sauce over the ice.
  16. Slice the cooled pisang ijo diagonally.
  17. Drizzle with cocopandan syrup to taste, arrange the pisang ijo slices on top, then pour over the sweetened condensed milk.
