Ingredients

jam ingredients:

Steps

  1. Prepare a bowl and add 250 gr of margarine, plus 1 tbsp of rum butter if you want a softer result.
  2. Add 2 tbsp of icing sugar and 2 egg yolks.
  3. Stir until evenly combined so the mixture is smooth and soft; you may also use a mixer on low speed for no more than 2 minutes so the cookies do not spread while baking.
  4. Add part of the 350 gr of wheat flour.
  5. Add 2 tbsp of cornstarch and 25 gr of milk powder, then sift to make sure there are no lumps.
  6. Add the rest of the flour and 1/2 tsp of vanilla powder for fragrance, then sift again.
  7. Stir until evenly combined so the dough is smooth, soft, and can be shaped.
  8. Continue kneading by hand to make sure the dough can be shaped and rolled.
  9. Take a little dough and roll it into a ball; if it still cracks add a little margarine, and if it is too soft add a little flour.
  10. Prepare the pineapple jam filling and roll it into balls of about 3 gr each so they are easier to pick up.
  11. Portion the dough with a measuring spoon at about 9 to 10 grams each so every cookie is the same size.
  12. Flatten the dough, add the jam, close it up, then roll it into a ball again until smooth and glossy.
  13. Repeat until all the dough has been shaped.
  14. Line the tray with baking paper, or brush the tray thinly with margarine.
  15. Preheat the oven, then put the tray of cookies on the lowest rack.
  16. Bake at 150 degrees Celsius with bottom heat for about 25 minutes, adjusting to your own oven.
  17. For the glaze, prepare 2 egg yolks and add 2 tbsp of cooking oil.
  18. Add 1 tbsp of liquid milk and one drop of yellow food colouring for a better colour, then stir until evenly combined.
  19. After 25 minutes, take the cookies out of the oven.
  20. While they are still hot, brush them straight away with the egg yolk glaze.
  21. For a prettier finish, brush them a second time starting from the first cookie you glazed, so they get two coats in total.
  22. Put the tray of cookies back into the oven on the top rack.
  23. Bake at 150 degrees Celsius with top heat for about 5 to 7 minutes.
  24. After about five minutes, take the cookies out of the oven since they are done.
  25. Let them cool before lifting them off the tray, then store them in an airtight container so they keep well and do not go soft.
