Ingredients

Steps

  1. Prepare a pot for cooking and add 375 gr of granulated sugar.
  2. Cook until the sugar turns into caramel over medium-low heat so it does not burn.
  3. Once the sugar starts to melt, do not stir it so it does not clump together; just swirl the pot.
  4. Once all the sugar has started to melt, you may stir it.
  5. Once all the sugar has melted into caramel, add 450 ml of hot water a little at a time so it does not splutter.
  6. Keep cooking until the caramel and water are evenly combined and the liquid boils again.
  7. Once it boils, turn off the heat, let it cool to warm or cold, and set it aside.
  8. Prepare a bowl and add 110 gr of tapioca flour, 110 gr of wheat flour, 1 tsp of baking soda, 1 tsp of baking powder, and 1/4 tsp of salt.
  9. Sift the dry ingredients to make sure there are no lumps.
  10. Add 135 gr of sweetened condensed milk and 150 gr of melted margarine.
  11. Stir until evenly combined.
  12. Add 6 eggs then stir again until evenly combined.
  13. Add the caramel liquid you set aside, straining it to make sure there is no debris or lumps.
  14. Stir again until evenly combined.
  15. Brush the tin thinly with margarine; I use a flower-shaped tin measuring 24 cm across the top.
  16. Dust the tin lightly with flour and tap it so the flour coats the whole tin, then tip out the excess.
  17. Pour the batter into the tin through a strainer to make sure there are no lumps.
  18. Preheat the oven for about 10 minutes at 175 degrees Celsius.
  19. Put the tin of batter on the lower rack and bake with bottom heat for about 30 minutes at 175 degrees Celsius.
  20. After 30 minutes, move the tin to the middle rack and continue baking with top and bottom heat at 175 degrees Celsius for about 30 to 40 minutes until the cake is done.
  21. Do a skewer test; if no batter sticks to it, the cake is done.
  22. Take the tin out of the oven and let it cool to warm or cold.
  23. Run a knife around the edge of the cake so it releases easily and does not stick to the tin, then turn it out and slice as you like.
