Ingredients

Steps

  1. In a saucepan, add 450 g granulated sugar and cook over the lowest heat until all the sugar melts into caramel, so it does not scorch and does not taste bitter.
  2. Once the sugar starts to melt, do not stir it or it will clump; just swirl the pan instead.
  3. Once all the sugar has melted into caramel, add 450 ml hot water gradually, a little at a time, so it does not splatter.
  4. Stir until evenly combined, turn off the stove, then leave the caramel solution to cool, or at least until only warm.
  5. In a bowl, add 140 g tapioca flour, 140 g wheat flour, 1 1/4 tsp baking powder, 1 1/4 tsp baking soda, 1/4 tsp salt, and 7 eggs.
  6. Stir the batter until evenly combined, smooth, slick, and free of lumps.
  7. Once the caramel solution has cooled, add 140 g melted margarine and 140 g sweetened condensed milk, then stir until evenly combined.
  8. Pour the caramel solution into the batter.
  9. Add 1 tsp vanilla, then stir the batter until evenly combined.
  10. Strain the batter to make sure there are no lumps.
  11. Grease a 24 cm round tin with margarine, then pour the batter into the tin.
  12. Preheat the oven for about 10 minutes, place the tin on the bottom rack, then bake at 150 degrees Celsius with top and bottom heat for about 50 to 60 minutes or until the cake is done.
  13. Do a skewer test; if no batter sticks to it, take the tin out of the oven.
  14. Let it rest until the cake is just warm before turning it out of the tin, then slice the cake and serve.
