Ingredients

Steps

  1. Prepare 1600 ml of coconut milk and pour it into a pot.
  2. Add 2 pandan leaves, 1 tsp of salt, and 500 gr of granulated sugar.
  3. Turn on medium heat and cook the coconut milk until it boils while stirring constantly so it does not split.
  4. Once the coconut milk boils and bubbles up, turn off the heat and let it cool.
  5. Put 500 gr of tapioca flour into a chopper.
  6. Add 250 gr of rice flour and 1/2 tsp of vanilla powder.
  7. Add part of the cooled coconut milk so the chopper is not too full.
  8. Fit the chopper lid and blend for about one minute until the batter is smooth and silky, with no need to strain it.
  9. If you do not have a chopper, mix the batter by hand with a whisk then strain it to make sure there are no lumps.
  10. Add the remaining coconut milk then stir until evenly combined.
  11. Divide the batter into two portions, 1200 ml and 1100 ml.
  12. To the 1100 ml portion add 1 tsp of white food colouring then stir until evenly combined.
  13. Divide the 1200 ml portion into 6 equal parts of 200 ml each.
  14. Add about eight drops of food colouring to each part then stir until evenly combined.
  15. Brush a 20 x 20 cm tin thinly with cooking oil.
  16. Heat the steamer until the water boils, then put in the tin.
  17. Pour in 100 ml of the purple batter, then steam for 5 minutes over medium heat.
  18. After 5 minutes make sure the layer has set, then pour in 100 ml of the white batter and steam for another 5 minutes.
  19. Pour in another 100 ml of the purple batter and steam for 5 minutes until set.
  20. Repeat the same way, alternating with the white batter, for blue, green, orange, yellow, and finally red, so each colour gets two layers.
  21. For the top layer from the remaining red batter, steam for 25 minutes so the cake is fully cooked and does not spoil quickly, adding hot water if the steamer water runs low.
  22. After 25 minutes, lift the tin out of the steamer.
  23. Let the cake cool so it firms up first, so it does not fall apart when turned out.
  24. Once cool, run a spatula around the edge of the tin then turn the cake out.
  25. Cover the knife with plastic or use a plastic knife so the cake does not stick, then slice it as you like.
