Steps

  1. Grease a 20 x 20 cm tin thinly with margarine, line it with baking paper, then set it aside.
  2. Prepare a bowl and add 60 g dark cooking chocolate and 100 ml cooking oil.
  3. Boil water in a pot over medium heat, then set the bowl of oil and chocolate over it until the chocolate melts.
  4. Stir until evenly combined, turn off the heat, then leave it until the steam has gone.
  5. Prepare a bowl and add 150 g granulated sugar, 4 medium eggs and 1 tsp emulsifier.
  6. Beat on maximum speed for about 10 minutes until the batter is risen, thick and holds a ribbon.
  7. Sift 100 g wheat flour and 35 g cocoa powder into the batter, then add a pinch of salt.
  8. Stir briefly first so the flour does not fly about, then beat on the lowest speed for about 30 seconds until evenly combined.
  9. Continue folding with a spatula to make sure the flour and batter are fully combined.
  10. Add the melted chocolate and oil mixture, then fold from the bottom up until evenly combined with no liquid settled at the bottom.
  11. Pour the batter into the tin, level it with a spatula, then tap the tin a few times so trapped air can escape.
  12. Put the tin into a steamer whose water is already boiling and steam for about 30 minutes over medium-low heat, with the lid wrapped in a clean cloth.
  13. After 30 minutes, test with a skewer; if no batter clings to it, take the tin out, run a knife around the edges, turn the brownies out and let them cool.
  14. Prepare a bowl, add 100 ml cold liquid whipping cream, then beat on maximum speed for about three minutes until it thickens into a cream.
  15. Spread the cream over the top of the cooled brownies.
  16. Cut the brownies to size, then top them with grated cheese and chocolate sprinkles.
