Steps

  1. Put 1 tbsp cornstarch, 1 tbsp cocoa powder, 50 g granulated sugar, and 150 ml milk into a pot and stir until evenly combined.
  2. Cook over medium low heat while stirring constantly until it boils and thickens.
  3. Turn off the heat, add 50 g dark cooking chocolate chopped small, and stir until melted and evenly combined.
  4. Let the chocolate custard cool, then set it aside.
  5. Put 150 g margarine and 100 g powdered sugar into a bowl.
  6. Beat until fluffy and pale, about five minutes at maximum speed.
  7. Add 3 egg yolks one at a time, beating about one minute each time until evenly combined.
  8. Add 3 tbsp milk, then keep beating until evenly combined.
  9. Add 150 g wheat flour and mix at the lowest speed for about 30 seconds, or fold it in with a spatula until combined.
  10. Transfer the batter into a piping bag, and put the cooled chocolate custard into a separate piping bag.
  11. Pipe the batter into paper muffin cups, covering the base then piping around the sides, filling only 3/4 of the cup.
  12. Pipe chocolate custard into the middle of each cup as needed.
  13. Add sliced almonds on top to taste.
  14. Bake on the lowest rack at 170 degrees Celsius with top and bottom heat for about 20 minutes.
  15. Do a skewer test at the edge of the cakes, if no batter sticks they are done, then take them out and let them cool.
