Ingredients

Vanilla Custard:

Steps

  1. Put 1 packet of white agar powder and 100 g granulated sugar into a pot, then stir until evenly combined.
  2. Add 650 ml water and 1/2 tsp vanilla, then stir until evenly combined.
  3. Cook over medium heat until it boils, stirring now and then, then turn off the heat and let it cool to warm.
  4. Arrange marie biscuits in a 24 cm mould.
  5. Once the pudding mixture is warm, pour it slowly and evenly over the biscuits so they do not break up.
  6. Leave it until the surface sets into a skin.
  7. For the butter layer, put 1 packet of white agar powder and 100 g granulated sugar into a pot, then stir until evenly combined.
  8. Add 600 ml liquid milk, 1/2 tsp vanilla, and 80 g sweetened condensed milk, then stir until evenly combined.
  9. Mix 100 g cooled melted margarine with 3 egg yolks, stir until evenly combined, then set aside.
  10. Cook the agar mixture over medium heat until it boils, stirring now and then, then lower the heat.
  11. Take a little of the hot mixture, pour it into the margarine and yolk mixture, then stir until evenly combined.
  12. Pour the yolk mixture back into the pot, then cook over medium heat until it boils again, stirring constantly.
  13. Turn off the heat, then keep stirring until the steam has gone or at least until it is just warm.
  14. Once the first layer is firm, pour the butter layer over slowly and evenly so the first layer does not sink.
  15. Leave it until the surface forms a skin firm enough to be layered over.
  16. For the chocolate layer, put 1 packet of white agar powder, 100 g granulated sugar, 20 g cocoa powder, and 10 g cornstarch into a pot, then stir until evenly combined.
  17. Add 750 ml liquid milk, stir until even, then add 100 g dark cooking chocolate chopped small.
  18. Cook over medium heat, stirring constantly, until it boils and the chocolate melts, then turn off the heat and stir until warm.
  19. Pour the chocolate pudding slowly and evenly into the mould.
  20. Leave until the pudding sets, then chill in the refrigerator for at least about 3 hours.
  21. For the custard, put 75 g granulated sugar, 2 tbsp cornstarch, 500 ml liquid milk, and 1 tsp vanilla into a pot, then stir until evenly combined.
  22. Cook over medium heat, stirring constantly, until it boils, thickens, and bubbles up, then turn off the heat and stir until the steam has gone.
  23. Chill the custard, then turn the pudding out of the mould, slice it, and serve it cold with the custard.
