Ingredients

Steps

  1. Brush the moulds thinly with cooking oil and set them aside.
  2. Put 1 pandan leaf, 75 g sago pearls, and 600 ml water into a pot.
  3. Set the heat to medium, cover the pot, then cook until it boils, for 5 minutes.
  4. Uncover the pot, turn off the heat, stir the sago so it does not stick, then cover it again and leave for 30 minutes.
  5. Uncover the pot and stir the sago, then cover it again and boil for another 7 minutes.
  6. Uncover the pot, turn off the heat, stir the sago, then cover again and leave for about 5 to 10 minutes until the pearls are evenly translucent.
  7. Rinse the sago with water, stir, then drain it and set aside.
  8. Put 120 g granulated sugar, 75 g mung bean starch, a pinch of salt, and 1/4 tsp vanilla powder into a pot.
  9. Pour in part of the 600 ml medium-thick coconut milk, then stir until the mixture is smooth, silky, and free of lumps.
  10. Add the remaining coconut milk and 1 pandan leaf.
  11. Cook over medium-low heat, stirring constantly, until it boils, thickens, and bubbles up, then turn off the heat.
  12. Add the cooked sago pearls, then stir until evenly combined.
  13. While still hot, pour the mixture into the moulds, as it firms up once cool.
  14. Leave until the cakes cool and set, then chill them in the refrigerator if you like.
  15. Turn the cakes out of the moulds and serve.
