Ingredients

Steps

  1. Bring water to a boil in a wok, then add the pearl sago and purple food colouring and stir until evenly combined.
  2. Boil for about five minutes with the wok covered, then turn off the heat.
  3. Leave it for about 20 minutes with the pan still covered until the pearl sago is completely translucent; with local pearl sago this may take about 30 to 40 minutes.
  4. Rinse the pearl sago with room temperature water, then drain it.
  5. Put the mung bean flour, sugar, and salt into a wok.
  6. Pour in the coconut milk, stir until evenly combined, then add the pandan leaves.
  7. Cook over medium heat while stirring constantly until the mixture thickens slightly, then turn off the heat.
  8. Set aside one quarter of the mixture.
  9. Add the pandan paste to the larger portion, then stir until evenly combined.
  10. Cook over medium heat while stirring constantly until it boils, thickens, and bubbles, then turn off the heat and set it aside.
  11. Mix the reserved quarter of the mixture with the cooked pearl sago.
  12. Cook over medium heat while stirring constantly until it boils and thickens; add more purple colouring if the colour is too pale, then turn off the heat.
  13. Wet the moulds with water so the cakes turn out more easily.
  14. While the mixture is still hot, pipe the pearl sago mixture straight into the moulds using a piping bag, as it sets quickly.
  15. Pipe the green mixture alongside it until the moulds are full.
  16. Tap the moulds several times so the mixture settles evenly.
  17. Leave them for about one hour until firm and set, or chill them in the fridge for about 10 minutes.
  18. Loosen the cakes from the moulds, then turn them out.
