Mocha Sponge Cake with Mocha Buttercream

Open offline saves

Ingredients

Buttercream:

Steps

  1. Grease a 20 x 20 cm tin with a thin layer of margarine.
  2. Line the tin with baking paper, or dust it thinly with wheat flour, then set it aside.
  3. Put the eggs, egg yolks, sugar, and emulsifier into a bowl.
  4. Beat on maximum speed for about 10 minutes until the batter is pale, thick, and holds a ribbon.
  5. Add the wheat flour, cornstarch, and milk powder, sifting them in so there are no lumps.
  6. Beat on the lowest speed for about 30 seconds, then carry on folding with a spatula until the flour and batter are evenly combined.
  7. Pour in the cooled melted margarine and the mocha paste.
  8. Fold from the bottom up until there is no melted margarine left settling at the bottom of the batter.
  9. Pour the batter into the tin, then tap the tin several times so the trapped air can escape.
  10. Bake on the lowest rack of a preheated oven with top and bottom heat for about 25 minutes until the cake is done, adjusting to your own oven.
  11. Test with a skewer to make sure the cake is done, then take the tin out and turn the cake out carefully as it is still hot.
  12. Peel the baking paper off the cake, then let it cool completely.
  13. For the buttercream, beat the margarine and icing sugar on maximum speed for about 10 minutes until fluffy and pale.
  14. Add the sweetened condensed milk and mocha paste, then beat again until evenly combined.
  15. Spread the cooled cake with the cream and level it with a spatula; keep some of the cream in a piping bag for decorating.
  16. Cut the cake into pieces as you like.
  17. Scatter chocolate sprinkles down the middle, pipe cream on top, then set chocolate balls on the cream.
