Ingredients

Steps

  1. Prepare a pot and add 240 g palm sugar, 2 pandan leaves, 45 g granulated sugar, half a teaspoon of salt and 480 ml coconut milk.
  2. Turn on medium heat and cook, stirring constantly, until the coconut milk boils and the sugar dissolves, then turn off the heat.
  3. Strain the palm sugar liquid to remove the sediment, then leave it briefly until cool.
  4. Pour the cooled palm sugar liquid into a blender.
  5. Add 225 g rice flour, 120 g wheat flour and one and a half teaspoons of instant yeast to the blender.
  6. Blend until the batter is smooth, silky and free of lumps.
  7. Cover the batter with cling film or a clean cloth and rest it for 45 minutes until doubled in size.
  8. After 45 minutes, uncover the batter, add 1 tsp baking powder, then stir until evenly combined and the foam has gone.
  9. Pour the batter into talam moulds, which do not need oiling, filling them almost to the top but not completely so the batter does not spread.
  10. Put the moulds into a steamer whose water is already boiling, spacing them apart so the cakes open up fully.
  11. Use only 1 to 1 and a half finger-widths of water in the steamer, and do not lift the lid during steaming.
  12. Steam for 15 minutes over high heat, with the steamer lid wrapped in a clean cloth.
  13. After 15 minutes, take the cakes out of the steamer and leave them until cold.
  14. Once cold, ease the cakes out of the moulds with a skewer or the tip of a spoon.
  15. Serve the cakes with grated coconut steamed for about 10 minutes with half a teaspoon of salt.
