Ingredients

Steps

  1. Set up the steamer, fill it with water about 1.5 to 2 finger joints deep, place the moulds inside, then heat the steamer and moulds over high heat until the water boils and steams heavily.
  2. Line the steamer lid with a clean cloth so condensation does not drip onto the batter.
  3. In a bowl, add 250 g rice flour, 180 g granulated sugar, 1 1/2 tsp baking powder, a pinch of salt, 40 g wheat flour, and 450 ml soda water, then stir until evenly combined.
  4. Remove the fibrous core from 180 g fermented cassava, then mash it.
  5. Add the mashed fermented cassava to the batter, then keep stirring until evenly combined.
  6. Strain the batter so the cakes turn out soft with a fine crumb.
  7. Divide the batter into three equal parts of about 630 g each, add about 5 drops of food colouring to each part, then stir until evenly combined.
  8. Once the steamer water is boiling and steaming heavily, pour the batter into the moulds until they are full.
  9. Steam the cakes over high heat for about 20 minutes or until cooked; do not lift the steamer lid before 20 minutes.
  10. Take the cakes out of the steamer, then steam the remaining batter.
  11. Loosen each cake from its mould to release it, then serve.
