Steps

  1. For the crispy sardines, drain the sardines, then rinse and pat them dry with paper towels and dust both sides with all-purpose flour.
  2. Combine the sago flour, rice flour, egg, baking powder, water, minced garlic, turmeric powder, salt, and pepper until evenly mixed.
  3. Dip the sardines into the batter, then fry in hot oil. Gradually pour in the crispy batter while stirring, and fry until golden.
  4. Fry the remaining batter as crispy flakes for the topping until golden brown.
  5. For the water spinach and tempeh stir-fry, bring water to a boil, add a little sugar and salt, briefly boil the water spinach, then rinse it with cold water.
  6. Grind the garlic, shallots, and aromatic ginger until smooth, then add the bird's-eye chilies and grind briefly.
  7. Heat a little oil, sauté the ground spices until fragrant, then add the tomato and sauté briefly.
  8. Pound the fried tempeh without crushing it too finely.
  9. Add the pounded tempeh and red chili to the stir-fry, then stir.
  10. Add the green onion and water spinach, then season with salt, pepper, sugar, flavor enhancer, and a little water before turning off the heat.
  11. For the Sayur Asem, bring the water to a boil in a pot, then add the shallots, galangal, and Indonesian bay leaves.
  12. Crush the peanuts, then add them to the pot with all the vegetables and remaining ingredients.
  13. Cook until boiling and all the vegetables are tender.
  14. Serve the crispy sardines, water spinach and tempeh stir-fry, and Sayur Asem with warm rice and sambal terasi.
