Steps

  1. Prepare a bowl and add 200 ml of warm liquid milk, 1 tbsp of granulated sugar, 1 tsp of salt, and 1/2 tbsp of instant yeast, then stir until evenly combined.
  2. Add 400 gr of high-protein wheat flour then stir the dough until evenly combined.
  3. Continue kneading by hand, adding water 1 tbsp at a time if the dough feels too dry.
  4. Knead the dough for about 10 minutes until it is soft; it does not need to reach the elastic windowpane stage.
  5. Once soft, roll the dough into a ball then put it back into the bowl.
  6. Cover the dough with plastic wrap or a clean cloth then rest it for about 40 to 60 minutes until doubled in size.
  7. Once doubled, knock the dough back to release the air inside, then shape it into a log.
  8. Divide the dough into 10 equal portions.
  9. Roll each portion into a smooth ball and line them up in the order they were rolled, since that is the order they will be rolled out.
  10. Cover the dough with plastic or a cloth then rest it for 15 minutes so it relaxes.
  11. Take one portion and roll it out thin into a round about 22 cm across, dusting the surface with flour so it rolls more easily, and keep the waiting dough covered so it stays moist.
  12. Prepare a plate or tray dusted with a little flour, then place the rolled-out dough on it.
  13. Brush the surface of the dough with margarine, using 100 gr of margarine for all of the dough.
  14. Stack the next rolled-out sheet on top of the buttered one, then repeat until all the dough has been rolled out.
  15. The very top sheet does not need to be brushed with margarine.
  16. Wrap the stack in plastic wrap then put it in the freezer for 1 hour.
  17. After one hour, dust the work surface with a little flour; if you are rolling it the next day, rest it at room temperature for about an hour first.
  18. Dust the surface of the dough with a little flour, then roll it out slowly and thin so it does not tear.
  19. Roll it out to about 60 cm across, flip the dough, dust with a little flour, then keep rolling until thin.
  20. Cut the dough into 16 equal wedges, starting with a cut through the middle.
  21. Snip a small notch in the middle of the wide edge of each wedge, add chocolate spread to taste, then roll the dough up.
  22. Place the shaped croissants on a tray brushed with margarine and lined with baking paper.
  23. Cover them with a clean cloth then rest for about 30 minutes until they have puffed up more.
  24. Lightly beat 1 egg then brush it over the whole surface of the croissants.
  25. Preheat the oven for about 10 minutes, then put in the tray on the lowest rack.
  26. Bake at 180 degrees Celsius with top and bottom heat for about 20 minutes until the croissants are done.
  27. After about 20 minutes, when the croissants are browned, take them out of the oven.
  28. While they are still hot, brush the croissants with margarine so they turn out glossy.
  29. Serve them warm, then bake the rest of the dough until it is all done.
