Steps

  1. Stir 1 tbsp wheat flour, 1 tbsp cooking oil, and 1 tbsp margarine until evenly combined, then grease a 24 cm round tin with this mixture.
  2. Prepare a bowl and add 275 g margarine, 50 g butter, and 200 g icing sugar.
  3. Beat on low speed first so the icing sugar does not fly around, then raise to maximum speed for about 10 minutes until the mixture is fluffy, pale, and thick.
  4. Add 8 egg yolks one at a time, beating on the lowest speed for about 20 seconds after each until evenly combined.
  5. Sift in 200 g low-protein wheat flour and 20 g milk powder.
  6. Stir briefly with a spatula so the flour does not fly around, then beat on the lowest speed until evenly combined.
  7. Fold the batter again with a spatula to make sure the flour is fully incorporated.
  8. In a separate bowl, add 7 egg whites and 1/4 tsp salt, then beat on maximum speed until foamy.
  9. Add 50 g granulated sugar in three additions along with 1 tbsp lemon or lime juice, keep beating to soft peaks, then stop the mixer; do not overmix.
  10. Add the egg white mixture to the yolk batter in three additions, folding gently from the bottom up until evenly combined.
  11. Take out one third of the batter, about 350 g, into a separate bowl.
  12. Mix 1 tbsp cocoa powder with 1 tsp chocolate paste and a little of that batter, stir until smooth, then pour it back into the one third of batter and stir until evenly combined.
  13. For the brownie batter, melt 45 g margarine together with 75 g dark cooking chocolate over hot water until melted and evenly combined, then set aside.
  14. Stir 60 g granulated sugar with 1 egg until evenly combined and the sugar dissolves.
  15. Add the melted chocolate mixture while it is still warm and stir until evenly combined.
  16. Sift in 50 g low-protein wheat flour and 10 g cocoa powder, then stir until evenly combined.
  17. Pour the plain and chocolate batters into the tin in alternating layers, pour the brownie batter on the very top, then cover it again with the plain batter.
  18. Level the batter with a spoon or spatula and dot the leftover chocolate batter on top to make a pattern.
  19. Tap the tin a few times so trapped air can escape from the batter.
  20. Bake in a preheated oven at 180 degrees Celsius with top and bottom heat for about 60 minutes, until the cake is done.
  21. Do a skewer test; once no batter clings to the skewer, take the tin out of the oven.
  22. Let it rest briefly until the cake is just warm, then turn the cake out of the tin.
  23. Slice the cake and serve.
